Ingredients:

beef chuck, cut into 1-inch cubes

dried guajillo chiles
4
dried ancho chiles
1
onion, chopped

cloves
garlic, minced

cups
beef broth
1
tsp
cumin
1
tsp
oregano
Salt and pepper to taste

vegetable oil
Instructions:
Toast the chiles in a dry skillet until fragrant. Remove seeds and stems.
Soak the chiles in hot water for 20 minutes.
Blend the chiles with a bit of the soaking water until smooth.
Heat oil in a pot, brown the beef cubes, then set aside.
In the same pot, sauté the onion and garlic until soft.
Add the beef back to the pot, pour in the chile sauce, beef broth, cumin, and oregano.
Simmer for 2 hours until the beef is tender. Season with salt and pepper.
Notes:
Serve with warm tortillas or rice.
