Ingredients:  

Main Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 dried guajillo chiles
  • 4 dried ancho chiles
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions: 

  • Toast the chiles in a dry skillet until fragrant. Remove seeds and stems.
  • Soak the chiles in hot water for 20 minutes.
  • Blend the chiles with a bit of the soaking water until smooth.
  • Heat oil in a pot, brown the beef cubes, then set aside.
  • In the same pot, sauté the onion and garlic until soft.
  • Add the beef back to the pot, pour in the chile sauce, beef broth, cumin, and oregano.
  • Simmer for 2 hours until the beef is tender. Season with salt and pepper.

Notes:

Serve with warm tortillas or rice.
