Ingredients:  

Main Ingredients

  • 2 cups leftover steak, cubed
  • 1 onion, chopped
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 2 cups beef broth
  • 1 cup water
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions: 

  • Heat olive oil in a pot over medium heat.
  • Add onions and cook until translucent.
  • Add carrots and potatoes, cook for 5 minutes.
  • Stir in tomato paste, thyme, salt, and pepper.
  • Pour in beef broth and water, bring to a boil.
  • Reduce heat and simmer for 30 minutes.
  • Add leftover steak and cook for another 10 minutes.

A great way to use up leftover steak and make a comforting meal.
