Ingredients:  

Main Ingredients

  • 2 cups Garbanzo beans cooked or canned
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Carrots sliced
  • 1 cup Celery sliced
  • 4 cups Vegetable broth
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1 tsp Salt to taste
  • 1/2 tsp Black pepper to taste
  • 2 tbsp Olive oil

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and minced garlic. Sauté until the onion is translucent.
  • Add sliced carrots and celery. Cook for about 5 minutes.
  • Add garbanzo beans, vegetable broth, cumin, paprika, salt, and black pepper. Stir well.
  • Bring to a boil, then reduce heat and let it simmer for 30 minutes.
  • Serve hot and enjoy!

Notes:

You can add other vegetables like bell peppers or zucchini for more variety.
