Instructions:
Heat olive oil in a large pot over medium heat.
Add chopped onion and minced garlic. Sauté until the onion is translucent.
Add sliced carrots and celery. Cook for about 5 minutes.
Add garbanzo beans, vegetable broth, cumin, paprika, salt, and black pepper. Stir well.
Bring to a boil, then reduce heat and let it simmer for 30 minutes.
Serve hot and enjoy!
Notes:
You can add other vegetables like bell peppers or zucchini for more variety.
