Ingredients:  

Main Ingredients

  • 2 lbs Lamb shoulder cut into chunks
  • 4 cups Beef broth
  • 2 Bay leaves
  • 1 tsp Cumin ground
  • 1 tsp Oregano dried
  • 1 tsp Salt
  • 1 tsp Black pepper ground

Sauce Ingredients

  • 4 Guajillo chiles deseeded
  • 2 Ancho chiles deseeded
  • 4 cloves Garlic peeled
  • 1 Onion quartered
  • 1 cup Tomatoes chopped
  • 1 cup Water

Instructions: 

  • 1. Soak the guajillo and ancho chiles in hot water for 15 minutes until softened.
  • 2. In a blender, combine soaked chiles, garlic, onion, tomatoes, and water. Blend until smooth.
  • 3. In a large pot, add lamb, beef broth, bay leaves, cumin, oregano, salt, and pepper. Pour in the blended sauce.
  • 4. Bring to a boil, then reduce heat and simmer for 3 hours until the lamb is tender.
  • 5. Serve hot with tortillas and your favorite toppings.

Notes:

For a richer flavor, marinate the lamb in the sauce overnight before cooking.
