Instructions:
1. Soak the guajillo and ancho chiles in hot water for 15 minutes until softened.
2. In a blender, combine soaked chiles, garlic, onion, tomatoes, and water. Blend until smooth.
3. In a large pot, add lamb, beef broth, bay leaves, cumin, oregano, salt, and pepper. Pour in the blended sauce.
4. Bring to a boil, then reduce heat and simmer for 3 hours until the lamb is tender.
5. Serve hot with tortillas and your favorite toppings.
Notes:
For a richer flavor, marinate the lamb in the sauce overnight before cooking.
