Ingredients:  

Main Ingredients

  • 2 lbs Pork shoulder, cubed
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 can Diced tomatoes (14.5 oz)
  • 1 can Black beans, drained and rinsed (15 oz)
  • 1 can Corn, drained (15 oz)
  • 4 cups Chicken broth
  • 2 tsp Chili powder
  • 1 tsp Ground cumin
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 Lime, juiced
  • 1/4 cup Cilantro, chopped

Instructions: 

  • 1. Heat a large pot over medium-high heat. Add the cubed pork and cook until browned on all sides.
  • 2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  • 3. Stir in the diced tomatoes, black beans, corn, and chicken broth. Bring to a boil.
  • 4. Add the chili powder, ground cumin, salt, and black pepper. Reduce heat and simmer for 45 minutes to 1 hour, or until the pork is tender.
  • 5. Stir in the lime juice and chopped cilantro just before serving.

Notes:

This stew is great served with warm tortillas or over rice.
