Instructions:
1. Heat a large pot over medium-high heat. Add the cubed pork and cook until browned on all sides.
2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
3. Stir in the diced tomatoes, black beans, corn, and chicken broth. Bring to a boil.
4. Add the chili powder, ground cumin, salt, and black pepper. Reduce heat and simmer for 45 minutes to 1 hour, or until the pork is tender.
5. Stir in the lime juice and chopped cilantro just before serving.
Notes:
This stew is great served with warm tortillas or over rice.
