Ingredients:  

Main Ingredients

  • 1 whole rabbit cut into pieces
  • 4 cups chicken broth
  • 2 cups potatoes peeled and diced
  • 1 cup carrots sliced
  • 1 cup celery sliced
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 tsp thyme dried
  • 1 tsp rosemary dried
  • to taste salt
  • to taste black pepper

Instructions: 

  • 1. Heat a large pot over medium heat and add a bit of oil.
  • 2. Brown the rabbit pieces on all sides, then remove and set aside.
  • 3. In the same pot, add the onion, garlic, carrots, and celery. Cook until softened.
  • 4. Return the rabbit to the pot and add the chicken broth, potatoes, thyme, and rosemary.
  • 5. Bring to a boil, then reduce heat and simmer for about 2 hours, or until the rabbit is tender.
  • 6. Season with salt and black pepper to taste before serving.

Notes:

For a thicker stew, you can mash some of the potatoes in the pot.
