Ingredients:

Instructions:
1. Heat a large pot over medium heat and add a bit of oil.
2. Brown the rabbit pieces on all sides, then remove and set aside.
3. In the same pot, add the onion, garlic, carrots, and celery. Cook until softened.
4. Return the rabbit to the pot and add the chicken broth, potatoes, thyme, and rosemary.
5. Bring to a boil, then reduce heat and simmer for about 2 hours, or until the rabbit is tender.
6. Season with salt and black pepper to taste before serving.
Notes:
For a thicker stew, you can mash some of the potatoes in the pot.
