Instructions:
Heat olive oil in a large pot over medium heat.
Add chicken strips and cook until browned.
Add bell peppers, onion, and garlic. Cook until softened.
Stir in chili powder, cumin, and paprika. Cook for 1 minute.
Add diced tomatoes and chicken broth. Bring to a boil.
Reduce heat and simmer for 30 minutes.
Season with salt and black pepper to taste. Serve hot.
Notes:
For extra flavor, top with fresh cilantro and a squeeze of lime juice.
