Pork shoulder

Olive oil
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the pork chunks and brown on all sides. Remove and set aside.
3. In the same pot, add the chopped onion and cook until translucent.
4. Add the minced garlic and cook for another minute.
5. Return the pork to the pot. Add the chicken broth, diced tomatoes, cumin, paprika, salt, and pepper.
6. Bring to a boil, then reduce heat to low and simmer for 1.5 hours, or until the pork is tender.
7. Serve hot with rice or bread.
Notes:
This stew is even better the next day!
