Ingredients:  

Main Ingredients

  • 2 lbs Pork shoulder cut into chunks
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 2 cups Chicken broth
  • 1 can Diced tomatoes
  • 1 tsp Cumin
  • 1 tsp Paprika
  • to taste Salt and pepper
  • 2 tbsp Olive oil

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the pork chunks and brown on all sides. Remove and set aside.
  • 3. In the same pot, add the chopped onion and cook until translucent.
  • 4. Add the minced garlic and cook for another minute.
  • 5. Return the pork to the pot. Add the chicken broth, diced tomatoes, cumin, paprika, salt, and pepper.
  • 6. Bring to a boil, then reduce heat to low and simmer for 1.5 hours, or until the pork is tender.
  • 7. Serve hot with rice or bread.

Notes:

This stew is even better the next day!
