Ingredients:  

Main Ingredients

  • 1 whole wild rabbit cut into pieces
  • 2 tbsp olive oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 2 cups carrots sliced
  • 2 cups potatoes diced
  • 4 cups chicken broth
  • 1 cup red wine
  • 2 sprigs thyme
  • 2 bay leaves bay leaves
  • to taste salt
  • to taste black pepper

Instructions: 

  • 1. Heat olive oil in a Dutch oven over medium heat. Brown the rabbit pieces on all sides. Remove and set aside.
  • 2. In the same pot, add the chopped onion and minced garlic. Sauté until softened.
  • 3. Add the carrots and potatoes. Cook for a few minutes.
  • 4. Pour in the chicken broth and red wine. Bring to a boil.
  • 5. Return the rabbit to the pot. Add thyme, bay leaves, salt, and pepper.
  • 6. Reduce heat, cover, and simmer for 2 hours or until the rabbit is tender.
  • 7. Remove thyme sprigs and bay leaves before serving.

Notes:

Serve with crusty bread for a complete meal.
