Ingredients:

Instructions:
1. Heat olive oil in a Dutch oven over medium heat. Brown the rabbit pieces on all sides. Remove and set aside.
2. In the same pot, add the chopped onion and minced garlic. Sauté until softened.
3. Add the carrots and potatoes. Cook for a few minutes.
4. Pour in the chicken broth and red wine. Bring to a boil.
5. Return the rabbit to the pot. Add thyme, bay leaves, salt, and pepper.
6. Reduce heat, cover, and simmer for 2 hours or until the rabbit is tender.
7. Remove thyme sprigs and bay leaves before serving.
Notes:
Serve with crusty bread for a complete meal.
