Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and cook until translucent, about 5 minutes.
3. Stir in the minced garlic and cook for another minute.
4. Add the artichokes, vegetable broth, diced tomatoes, oregano, and thyme.
5. Bring to a boil, then reduce heat and let it simmer for 30-35 minutes, until the artichokes are tender.
6. Season with salt and pepper to taste.
7. Serve hot and enjoy!

This stew is even better the next day, so consider making it ahead of time.
