Lamb shoulder, cut into chunks

Sweet potatoes, peeled and cubed

Onion, chopped

Garlic, minced

Chicken broth

Olive oil
Instructions:
Heat olive oil in a large pot over medium heat.
Add lamb chunks and brown on all sides. Remove and set aside.
In the same pot, add onion and garlic. Cook until softened.
Return lamb to the pot. Add sweet potatoes, chicken broth, cumin, coriander, paprika, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 45 minutes, or until lamb and sweet potatoes are tender.
Serve hot.

This stew is even better the next day!
