Ingredients:  

Main Ingredients

  • 1 lb Lamb shoulder, cut into chunks
  • 2 large Sweet potatoes, peeled and cubed
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 2 cups Chicken broth
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 1 tsp Paprika
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Olive oil

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add lamb chunks and brown on all sides. Remove and set aside.
  • In the same pot, add onion and garlic. Cook until softened.
  • Return lamb to the pot. Add sweet potatoes, chicken broth, cumin, coriander, paprika, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 45 minutes, or until lamb and sweet potatoes are tender.
  • Serve hot.

Notes:

This stew is even better the next day!
