Ingredients:  

Main Ingredients

  • 1 whole rabbit, cut into pieces
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 large carrots, sliced
  • 2 stalks celery, chopped
  • 2 cups potatoes, diced
  • 4 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • to taste salt and pepper

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat. Add the rabbit pieces and brown on all sides. Remove and set aside.
  • 2. In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent.
  • 3. Add the carrots, celery, and potatoes. Cook for about 5 minutes, stirring occasionally.
  • 4. Return the rabbit to the pot. Pour in the chicken broth and add the thyme and rosemary. Season with salt and pepper to taste.
  • 5. Bring to a boil, then reduce the heat to low. Cover and simmer for 1.5 hours, or until the rabbit is tender and the vegetables are cooked through.
  • 6. Serve hot and enjoy your hearty rabbit stew with vegetables!
