celery, chopped

potatoes, diced

chicken broth

Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the rabbit pieces and brown on all sides. Remove and set aside.
2. In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent.
3. Add the carrots, celery, and potatoes. Cook for about 5 minutes, stirring occasionally.
4. Return the rabbit to the pot. Pour in the chicken broth and add the thyme and rosemary. Season with salt and pepper to taste.
5. Bring to a boil, then reduce the heat to low. Cover and simmer for 1.5 hours, or until the rabbit is tender and the vegetables are cooked through.
6. Serve hot and enjoy your hearty rabbit stew with vegetables!
