Ingredients:  

Main Ingredients

  • 1 kg Chicken thighs bone-in, skinless
  • 2 tbsp Olive oil
  • 1 large Onion chopped
  • 4 cloves Garlic minced
  • 400 g Tomato passata
  • 1 cup Chicken broth
  • 1 tsp Dried thyme
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 2 tbsp Fresh parsley chopped

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the chopped onion and cook until softened, about 5 minutes.
  • 3. Add the minced garlic and cook for another minute.
  • 4. Add the chicken thighs and cook until browned on all sides.
  • 5. Pour in the tomato passata and chicken broth.
  • 6. Stir in the dried thyme, salt, and black pepper.
  • 7. Bring to a boil, then reduce the heat and let it simmer for 30 minutes.
  • 8. Garnish with fresh parsley before serving.

Notes:

Serve with polenta or mashed potatoes for a complete meal.
