Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and cook until softened, about 5 minutes.
3. Add the minced garlic and cook for another minute.
4. Add the chicken thighs and cook until browned on all sides.
5. Pour in the tomato passata and chicken broth.
6. Stir in the dried thyme, salt, and black pepper.
7. Bring to a boil, then reduce the heat and let it simmer for 30 minutes.
8. Garnish with fresh parsley before serving.
Notes:
Serve with polenta or mashed potatoes for a complete meal.
