Ingredients:  

Main Ingredients

  • 1 cup Farro rinsed
  • 4 cups Broccoli chopped
  • 1 large Onion diced
  • 2 cloves Garlic minced
  • 6 cups Vegetable Broth
  • 2 tbsp Olive Oil
  • 1 tsp Salt to taste
  • 0.5 tsp Black Pepper to taste

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion and cook until translucent, about 5 minutes.
  • Add minced garlic and cook for another minute.
  • Add farro and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
  • Add chopped broccoli and cook for another 10-15 minutes, until broccoli is tender.
  • Season with salt and black pepper to taste. Serve hot.

Notes:

Feel free to add other vegetables like carrots or celery.
