Instructions:
Heat olive oil in a large pot over medium heat.
Add diced onion and cook until translucent, about 5 minutes.
Add minced garlic and cook for another minute.
Add farro and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
Add chopped broccoli and cook for another 10-15 minutes, until broccoli is tender.
Season with salt and black pepper to taste. Serve hot.
Notes:
Feel free to add other vegetables like carrots or celery.
