Ingredients:  

Main Ingredients

  • 1 lb Beef Stew Meat cut into chunks
  • 2 cups Macaroni
  • 1 Onion chopped
  • 3 cloves Garlic minced
  • 3 Carrots sliced
  • 2 stalks Celery sliced
  • 4 cups Beef Broth
  • 2 tbsp Tomato Paste
  • 1 tsp Dried Thyme
  • 1 tsp Dried Rosemary
  • to taste Salt and Pepper
  • 2 tbsp Olive Oil

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add beef and cook until browned on all sides.
  • Add chopped onion and minced garlic to the pot. Cook until onions are translucent.
  • Add carrots and celery. Cook for another 5 minutes.
  • Stir in tomato paste, thyme, and rosemary. Cook for 2 minutes.
  • Pour in beef broth. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  • Add macaroni and cook for an additional 15 minutes or until tender.
  • Season with salt and pepper to taste. Serve hot.

Notes:

Feel free to add other vegetables like peas or potatoes.
