Ingredients:  

Main Ingredients

  • 1 lb chicken thighs cut into chunks
  • 1 lb okra sliced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 can diced tomatoes
  • 2 cups chicken broth
  • 1 tsp paprika
  • 1 tsp thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chicken and cook until browned.
  • Add onion and garlic, cook until softened.
  • Stir in diced tomatoes, chicken broth, paprika, and thyme.
  • Bring to a boil, then reduce heat and simmer for 30 minutes.
  • Add okra and cook for another 15 minutes.
  • Season with salt and pepper to taste.

Notes:

Serve hot with rice or bread.
