Ingredients:  

Main Ingredients

  • 1 head cabbage chopped
  • 4 potatoes peeled and diced
  • 3 carrots sliced
  • 1 large onion chopped
  • 4 cups vegetable broth
  • 2 cloves garlic minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp thyme dried

Instructions: 

  • 1. In a large pot, heat some oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  • 2. Add the chopped cabbage, potatoes, and carrots to the pot. Stir well to combine.
  • 3. Pour in the vegetable broth and add the salt, pepper, and thyme. Bring to a boil.
  • 4. Reduce the heat to low, cover, and let simmer for about 45 minutes, or until the vegetables are tender.
  • 5. Taste and adjust seasoning if necessary. Serve hot.

Notes:

This stew is perfect for a cold day. Feel free to add some cooked sausage or bacon for extra flavor.
