Instructions:
1. In a large pot, heat some oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
2. Add the chopped cabbage, potatoes, and carrots to the pot. Stir well to combine.
3. Pour in the vegetable broth and add the salt, pepper, and thyme. Bring to a boil.
4. Reduce the heat to low, cover, and let simmer for about 45 minutes, or until the vegetables are tender.
5. Taste and adjust seasoning if necessary. Serve hot.
Notes:
This stew is perfect for a cold day. Feel free to add some cooked sausage or bacon for extra flavor.
