Ingredients:  

Main Ingredients

  • 2 lbs Pork shoulder cut into chunks
  • 2 tbsp Olive oil
  • 1 Large onion chopped
  • 3 cloves Garlic minced
  • 1 Green bell pepper chopped
  • 1 Red bell pepper chopped
  • 2 cups Tomato sauce
  • 1 cup Chicken broth
  • 2 Bay leaves
  • 1 tsp Dried oregano
  • 1 tsp Ground cumin
  • 2 Large potatoes peeled and cubed
  • 1 cup Frozen peas
  • to taste Salt and pepper

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add pork and brown on all sides.
  • Add chopped onion, garlic, green and red bell peppers. Cook until vegetables are tender.
  • Stir in tomato sauce, chicken broth, bay leaves, oregano, and cumin. Bring to a boil.
  • Reduce heat to low, cover, and simmer for 1 hour.
  • Add potatoes and cook until tender, about 20 minutes more.
  • Stir in frozen peas and cook for an additional 5 minutes. Season with salt and pepper to taste.

Notes:

Serve hot with white rice or crusty bread.
