Ingredients:  

Main Ingredients

  • 2 units Sweet Potatoes peeled and diced
  • 1 block Tofu firm, cubed
  • 1 unit Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Paprika

Instructions: 

  • 1. Heat a large pot over medium heat and add a bit of oil.
  • 2. Add the chopped onion and minced garlic, cook until softened.
  • 3. Add the diced sweet potatoes and cook for a few minutes.
  • 4. Pour in the vegetable broth, bring to a boil, then reduce to a simmer.
  • 5. Add the cubed tofu, salt, pepper, and paprika. Simmer until sweet potatoes are tender.
  • 6. Serve hot and enjoy!

Notes:

This stew is perfect for a cozy dinner. Feel free to add other vegetables like carrots or spinach.
