Ingredients:  

Main Ingredients

  • 2 pieces chicken breasts, diced
  • 200 g chorizo, sliced
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • 1 piece red bell pepper, chopped
  • 1 piece yellow bell pepper, chopped
  • 400 g can of chopped tomatoes
  • 1 cup chicken broth
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add the chicken and cook until browned. Remove and set aside.
  • In the same pot, add chorizo and cook until it releases its oils.
  • Add onion, garlic, and bell peppers. Cook until softened.
  • Stir in chopped tomatoes, chicken broth, and smoked paprika.
  • Return the chicken to the pot. Season with salt and pepper.
  • Simmer for 30 minutes until the chicken is cooked through.

Notes:

Serve hot with crusty bread or rice.
