Instructions:
1. In a large pot, brown the beef stew meat over medium heat.
2. Add the chopped onions and minced garlic, and cook until softened.
3. Pour in the beef broth and bring to a boil.
4. Add the carrots, potatoes, salt, pepper, and thyme. Reduce heat and simmer for 45-60 minutes, or until vegetables are tender.
5. Adjust seasoning to taste and serve hot.
Notes:
Feel free to add any other vegetables you have on hand.
