Ingredients:  

Main Ingredients

  • 4 ears corn husked and cut into pieces
  • 2 cups vegetable broth
  • 1 cup diced tomatoes canned or fresh
  • 1 cup diced potatoes
  • 1 cup chopped onions
  • 2 cloves garlic minced
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper or to taste

Instructions: 

  • 1. In a large pot, combine vegetable broth, diced tomatoes, diced potatoes, chopped onions, and minced garlic.
  • 2. Bring to a boil, then reduce heat and let it simmer for 10 minutes.
  • 3. Add the corn pieces to the pot and season with salt and black pepper.
  • 4. Cover and steam for about 20 minutes, or until the corn is tender.
  • 5. Serve hot and enjoy!

Notes:

Feel free to add other vegetables like carrots or bell peppers for extra flavor.
