Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 artichoke hearts, quartered canned or fresh
  • 2 potatoes, peeled and cubed
  • 1 cup vegetable broth
  • 1 tsp dried oregano
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper or to taste
  • 1/4 cup fresh parsley, chopped for garnish

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and cook until translucent, about 5 minutes.
  • Stir in minced garlic and cook for another minute.
  • Add artichoke hearts and cubed potatoes to the pot.
  • Pour in vegetable broth and bring to a boil.
  • Reduce heat to low, cover, and simmer for 30-35 minutes, or until potatoes are tender.
  • Season with dried oregano, salt, and black pepper.
  • Garnish with fresh parsley before serving.

Notes:

Serve with crusty bread for a complete meal.
