Ingredients:  

Main Ingredients

  • 1 lb Beef stew meat cut into cubes
  • 1 lb Sausage sliced
  • 2 cups Beef broth
  • 1 cup Chopped carrots
  • 1 cup Chopped celery
  • 1 cup Chopped onions
  • 2 cloves Garlic minced
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 2 tbsp Olive oil
  • 2 tbsp Tomato paste
  • 1 cup Red wine optional
  • 2 cups Diced tomatoes canned
  • 2 cups Potatoes peeled and cubed

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add beef and sausage, cook until browned.
  • 3. Add onions, garlic, carrots, and celery. Cook until vegetables are tender.
  • 4. Stir in tomato paste and cook for another 2 minutes.
  • 5. Pour in red wine, if using, and cook until reduced by half.
  • 6. Add beef broth, diced tomatoes, potatoes, salt, and pepper. Bring to a boil.
  • 7. Reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until beef is tender.
  • 8. Adjust seasoning to taste before serving.

Notes:

Serve with crusty bread for a complete meal.
