Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add beef and sausage, cook until browned.
3. Add onions, garlic, carrots, and celery. Cook until vegetables are tender.
4. Stir in tomato paste and cook for another 2 minutes.
5. Pour in red wine, if using, and cook until reduced by half.
6. Add beef broth, diced tomatoes, potatoes, salt, and pepper. Bring to a boil.
7. Reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until beef is tender.
8. Adjust seasoning to taste before serving.
Notes:
Serve with crusty bread for a complete meal.
