Ingredients:  

Main Ingredients

  • 1 lb Chicken Breast cut into cubes
  • 2 cups Chicken Broth
  • 1 can Diced Tomatoes 14.5 oz can
  • 2 pcs Chipotle Peppers in Adobo Sauce chopped
  • 1 pc Onion chopped
  • 2 cloves Garlic minced
  • 1 tsp Ground Cumin
  • 1 tsp Dried Oregano
  • to taste Salt and Pepper

Instructions: 

  • 1. Heat a large pot over medium heat and add a bit of oil.
  • 2. Add the chopped onion and garlic, and sauté until they are soft.
  • 3. Add the chicken cubes and cook until they are browned on all sides.
  • 4. Stir in the chipotle peppers, diced tomatoes, chicken broth, cumin, and oregano.
  • 5. Bring the stew to a boil, then reduce the heat and let it simmer for about 30 minutes.
  • 6. Season with salt and pepper to taste before serving.

Notes:

This stew is perfect for a cozy dinner. Serve with rice or warm tortillas.
