Instructions:
1. Heat a large pot over medium heat and add a bit of oil.
2. Add the chopped onion and garlic, and sauté until they are soft.
3. Add the chicken cubes and cook until they are browned on all sides.
4. Stir in the chipotle peppers, diced tomatoes, chicken broth, cumin, and oregano.
5. Bring the stew to a boil, then reduce the heat and let it simmer for about 30 minutes.
6. Season with salt and pepper to taste before serving.

This stew is perfect for a cozy dinner. Serve with rice or warm tortillas.
