Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add beef stew meat and cook until browned on all sides.
3. Add chopped onions and minced garlic, cook until onions are translucent.
4. Pour in beef broth, bring to a boil, then reduce heat to low and simmer for 1 hour.
5. Add carrots, potatoes, salt, and pepper. Simmer for another 30 minutes.
6. Stir in chopped kale and cook for an additional 10 minutes.
7. Serve hot and enjoy!
Notes:
You can add other vegetables like celery or peas for extra flavor.
