Ingredients:  

Main Ingredients

  • 2 tbsp Olive Oil
  • 1 large Onion, chopped
  • 2 cloves Garlic, minced
  • 1 lb Lamb, cubed
  • 2 cups Chickpeas, cooked
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 1 tsp Turmeric
  • 4 cups Chicken Broth
  • 2 cups Diced Tomatoes
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/4 cup Fresh Parsley, chopped

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and cook until translucent.
  • Add minced garlic and cook for another minute.
  • Add cubed lamb and brown on all sides.
  • Stir in cumin, coriander, and turmeric.
  • Add chicken broth, diced tomatoes, and chickpeas.
  • Season with salt and black pepper.
  • Bring to a boil, then reduce heat and simmer for 30 minutes.
  • Garnish with fresh parsley before serving.

Notes:

This stew pairs well with rice or flatbread.
