Instructions:
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent.
Add minced garlic and cook for another minute.
Add cubed lamb and brown on all sides.
Stir in cumin, coriander, and turmeric.
Add chicken broth, diced tomatoes, and chickpeas.
Season with salt and black pepper.
Bring to a boil, then reduce heat and simmer for 30 minutes.
Garnish with fresh parsley before serving.
Notes:
This stew pairs well with rice or flatbread.
