Ingredients:  

Main Ingredients

  • 2 lbs beef stew meat cut into 1-inch cubes
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 1 can diced tomatoes 14.5 oz
  • 1 can black beans 15 oz, drained and rinsed
  • 1 can corn 15 oz, drained
  • 4 cups beef broth
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add beef and cook until browned on all sides. Remove beef and set aside.
  • In the same pot, add onion and garlic. Cook until softened.
  • Add bell peppers and cook for another 5 minutes.
  • Return beef to the pot. Add diced tomatoes, black beans, corn, and beef broth.
  • Stir in chili powder, cumin, smoked paprika, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 2 hours, or until beef is tender.
  • Serve hot.
