beef stew meat
cut into 1-inch cubes

onion
chopped

cloves
garlic
minced

red bell pepper
chopped

green bell pepper
chopped

can
diced tomatoes
14.5 oz

black beans
15 oz, drained and rinsed

can
corn
15 oz, drained

beef broth

chili powder

cumin

tsp
smoked paprika
Salt and pepper
to taste

olive oil
Instructions:
Heat olive oil in a large pot over medium heat. Add beef and cook until browned on all sides. Remove beef and set aside.
In the same pot, add onion and garlic. Cook until softened.
Add bell peppers and cook for another 5 minutes.
Return beef to the pot. Add diced tomatoes, black beans, corn, and beef broth.
Stir in chili powder, cumin, smoked paprika, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 2 hours, or until beef is tender.
Serve hot.
