Guinness beer

Cheddar Herb Dumplings

all-purpose flour

baking powder

sharp cheddar cheese, shredded

fresh parsley, chopped

milk

butter, melted
Instructions:
1. Heat the olive oil in a large pot over medium-high heat. Add the beef and brown on all sides. Remove and set aside.
2. In the same pot, add the onion and garlic. Cook until softened.
3. Add the carrots and potatoes. Cook for a few minutes, then add the beef back to the pot.
4. Pour in the Guinness beer, beef broth, and tomato paste. Stir in the thyme and rosemary. Season with salt and pepper.
5. Bring to a boil, then reduce heat and simmer for about 2 hours, or until the beef is tender.
6. For the dumplings, mix the flour, baking powder, and salt in a bowl. Stir in the cheddar cheese and parsley.
7. Add the milk and melted butter to the dry ingredients. Stir until just combined.
8. Drop spoonfuls of the dumpling batter onto the simmering stew. Cover and cook for another 20 minutes, or until the dumplings are cooked through.
Notes:
For a richer flavor, you can marinate the beef in Guinness overnight.
