Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add rooster pieces and brown on all sides.
3. Remove rooster and set aside.
4. In the same pot, add onions and garlic. Sauté until softened.
5. Stir in tomato paste, thyme, and rosemary.
6. Add carrots, potatoes, and chicken broth. Bring to a boil.
7. Return rooster to the pot. Reduce heat and simmer for 2 hours.
8. Season with salt and pepper to taste. Serve hot.
Notes:
This stew is even better the next day. Store leftovers in the fridge and reheat before serving.
