Instructions:
1. Heat some oil in a large pot over medium heat.
2. Add the beef and cook until browned on all sides.
3. Add the onion and garlic, and cook until softened.
4. Stir in the tomato paste, thyme, salt, and pepper.
5. Pour in the beef stock and bring to a boil.
6. Reduce the heat, cover, and simmer for 1.5 hours.
7. Add the carrots and potatoes, and cook for another 30 minutes until tender.
Notes:
Serve hot with crusty bread.
