Ingredients:  

Main Ingredients

  • 1 lb Pork shoulder cut into chunks
  • 2 Carrots sliced
  • 2 Celery stalks sliced
  • 1 Onion chopped
  • 3 cloves Garlic minced
  • 1 can Diced tomatoes
  • 2 cups Chicken broth
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 2 tbsp Olive oil
  • 1 cup Kale chopped

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add pork and cook until browned on all sides.
  • Add carrots, celery, and onion to the pot. Cook until vegetables are softened.
  • Stir in garlic and cook for another minute.
  • Add diced tomatoes, chicken broth, oregano, basil, salt, and pepper. Bring to a boil.
  • Reduce heat to low, cover, and simmer for 1 hour.
  • Stir in kale and cook for another 10 minutes.
  • Serve hot.

Notes:

This stew is even better the next day!
