Instructions:
Heat olive oil in a large pot over medium heat. Add pork and cook until browned on all sides.
Add carrots, celery, and onion to the pot. Cook until vegetables are softened.
Stir in garlic and cook for another minute.
Add diced tomatoes, chicken broth, oregano, basil, salt, and pepper. Bring to a boil.
Reduce heat to low, cover, and simmer for 1 hour.
Stir in kale and cook for another 10 minutes.
Serve hot.
Notes:
This stew is even better the next day!
