Vegetable Broth

Soy Sauce

Ginger

Instructions:
1. Heat a large pot over medium heat. Add a splash of oil.
2. Add the chopped onions and garlic. Sauté until fragrant.
3. Add the carrots and potatoes. Cook for about 5 minutes.
4. Pour in the vegetable broth, soy sauce, and grated ginger. Bring to a boil.
5. Reduce heat and let it simmer for 15 minutes, or until vegetables are tender.
6. Add the cubed tofu and simmer for another 5 minutes.
7. Season with salt and pepper to taste. Serve hot.
Notes:
Feel free to add more vegetables like bell peppers or peas.
