Ingredients:  

Main Ingredients

  • 1 block Tofu firm, drained and cubed
  • 1 cup Carrots sliced
  • 1 cup Potatoes diced
  • 1 cup Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 2 tbsp Soy Sauce
  • 1 tsp Ginger grated
  • 1 tsp Salt to taste
  • 1 tsp Pepper to taste

Instructions: 

  • 1. Heat a large pot over medium heat. Add a splash of oil.
  • 2. Add the chopped onions and garlic. Sauté until fragrant.
  • 3. Add the carrots and potatoes. Cook for about 5 minutes.
  • 4. Pour in the vegetable broth, soy sauce, and grated ginger. Bring to a boil.
  • 5. Reduce heat and let it simmer for 15 minutes, or until vegetables are tender.
  • 6. Add the cubed tofu and simmer for another 5 minutes.
  • 7. Season with salt and pepper to taste. Serve hot.

Notes:

Feel free to add more vegetables like bell peppers or peas.
