Ingredients:  

Main Ingredients

  • 1 lb Beef Stew Meat cut into cubes
  • 1 tbsp Olive Oil
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 can Diced Tomatoes 14.5 oz can
  • 1 can Black Beans 15 oz can, drained and rinsed
  • 1 cup Beef Broth
  • 1 tbsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 cup Frozen Corn

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add beef stew meat and cook until browned on all sides.
  • Add chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  • Stir in diced tomatoes, black beans, beef broth, chili powder, cumin, salt, and black pepper. Bring to a boil.
  • Reduce heat to low and let simmer for 1 hour, stirring occasionally.
  • Add frozen corn and continue to simmer for an additional 30 minutes.
  • Serve hot and enjoy!

Notes:

This stew is perfect for a cozy night in. Serve with warm tortillas or crusty bread.
