Ingredients:  

Main Ingredients

  • 2 cups Oysters shucked
  • 1 cup Coconut Milk
  • 1 cup Vegetable Broth
  • 1 tbsp Olive Oil
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste

Instructions: 

  • Heat olive oil in a pot over medium heat.
  • Add chopped onion and minced garlic, sauté until translucent.
  • Add oysters and cook for 2-3 minutes.
  • Pour in coconut milk and vegetable broth, bring to a simmer.
  • Season with salt and black pepper to taste. Simmer for 10-15 minutes.
  • Serve hot.

Notes:

Feel free to add other seasonings or vegetables to taste.
