Instructions:
Heat olive oil in a pot over medium heat.
Add chopped onion and minced garlic, sauté until translucent.
Add oysters and cook for 2-3 minutes.
Pour in coconut milk and vegetable broth, bring to a simmer.
Season with salt and black pepper to taste. Simmer for 10-15 minutes.
Serve hot.
