Ingredients:  

Main Ingredients

  • 1 lb Chicken breast, diced
  • 4 medium Potatoes, peeled and diced
  • 1 large Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Chicken broth
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 tsp Dried thyme
  • 2 tbsp Olive oil

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add diced chicken and cook until browned.
  • 3. Add chopped onion and minced garlic, cook until softened.
  • 4. Add diced potatoes, chicken broth, salt, pepper, and thyme.
  • 5. Bring to a boil, then reduce heat and simmer for 30 minutes or until potatoes are tender.
  • 6. Serve hot and enjoy!

Notes:

Feel free to add other vegetables like carrots or peas for extra flavor and nutrition.
