Ingredients:  

Main Ingredients

  • 1 lb Chicken Breast cut into cubes
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • 1 cup Peas
  • 1 cup Onion chopped
  • 3 cloves Garlic minced
  • 4 cups Chicken Broth
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste
  • 2 tbsp Olive Oil

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the chicken and cook until browned on all sides.
  • 3. Add the onions and garlic, and cook until softened.
  • 4. Add the carrots, potatoes, and peas. Stir to combine.
  • 5. Pour in the chicken broth and bring to a boil.
  • 6. Reduce heat and simmer for about 30 minutes, or until vegetables are tender.
  • 7. Season with salt and pepper to taste. Serve hot.

Notes:

This stew is great for meal prep and can be stored in the fridge for up to 3 days.
