Instructions:
1. Heat olive oil in a large pot over medium heat. Add beef and cook until browned.
2. Add onions and garlic, cook until softened.
3. Pour in beef broth, add carrots and potatoes. Bring to a boil.
4. Reduce heat, cover, and simmer for 2 hours or until beef is tender.
5. Season with salt and pepper to taste. Serve hot.
Notes:
For a thicker stew, mix 2 tablespoons of flour with a bit of water and stir into the stew during the last 30 minutes of cooking.
