Ingredients:  

Main Ingredients

  • 2 lbs Armadillo meat cubed
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • 4 cups Chicken broth
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 2 tbsp Olive oil

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add the cubed armadillo meat and cook until browned on all sides.
  • Add the chopped onion and minced garlic, cook until softened.
  • Add the sliced carrots and diced potatoes, stir to combine.
  • Pour in the chicken broth, add salt and black pepper. Bring to a boil.
  • Reduce heat to low, cover, and simmer for 2 hours or until the meat is tender.
  • Serve hot and enjoy!

Notes:

Feel free to add other vegetables like bell peppers or celery for extra flavor.
