Ingredients:  

Main Ingredients

  • 2 tbsp Olive Oil
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 1 Red Bell Pepper, chopped
  • 400 g Canned Tomatoes
  • 500 ml Fish Stock
  • 300 g White Fish Fillets, cut into chunks
  • 1 tsp Dried Oregano
  • 1 tsp Dried Basil
  • to taste Salt and Pepper
  • 1 handful Fresh Parsley, chopped

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and cook until softened, about 5 minutes.
  • Add the minced garlic and chopped red bell pepper, cook for another 2-3 minutes.
  • Stir in the canned tomatoes and fish stock, bring to a simmer.
  • Add the fish chunks, dried oregano, and dried basil. Season with salt and pepper to taste.
  • Simmer for 10-15 minutes until the fish is cooked through.
  • Garnish with fresh parsley before serving.

Notes:

Serve with crusty bread for a complete meal.
