Ingredients:  

Main Ingredients

  • 1 can corned beef
  • 2 medium tomatoes chopped
  • 1 medium onion chopped
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 2 cloves garlic minced
  • 1 teaspoon curry powder
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions: 

  • Heat oil in a pan over medium heat.
  • Add chopped onions and garlic, sauté until translucent.
  • Add chopped tomatoes and bell peppers, cook until soft.
  • Stir in curry powder, thyme, and paprika.
  • Add corned beef, breaking it up with a spoon.
  • Season with salt and pepper.
  • Simmer for 10 minutes, stirring occasionally.

Notes:

Serve with rice or bread.
