Ingredients:  

Main Ingredients

  • 2 lbs lamb shoulder, cut into chunks
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 3 cups potatoes, peeled and cubed
  • 2 cups carrots, sliced
  • 2 cups corn kernels
  • 4 cups beef broth
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp ground cumin

Instructions: 

  • 1. In a large pot, brown the lamb chunks over medium heat.
  • 2. Add the chopped onion and minced garlic, cook until softened.
  • 3. Stir in the potatoes, carrots, and corn.
  • 4. Pour in the beef broth, then add salt, black pepper, and ground cumin.
  • 5. Bring to a boil, then reduce heat and simmer for about 1.5 hours, or until the lamb is tender.
  • 6. Adjust seasoning if needed and serve hot.

Notes:

This stew is perfect for cold days and can be served with traditional Navajo fry bread.
