Ingredients:  

Main Ingredients

  • 2 lbs pork shoulder cut into chunks
  • 1 large onion chopped
  • 1 large green bell pepper chopped
  • 4 cloves garlic minced
  • 1 cup tomato sauce
  • 2 cups chicken broth
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 2 cups potatoes peeled and diced
  • 1 cup carrots sliced
  • 1 cup peas
  • to taste salt and pepper

Instructions: 

  • 1. Heat some oil in a large pot over medium heat. Add the pork and cook until browned on all sides.
  • 2. Add the onion, green bell pepper, and garlic. Cook until the vegetables are softened.
  • 3. Stir in the tomato sauce, chicken broth, cumin, and oregano. Bring to a boil.
  • 4. Reduce the heat to low, cover, and simmer for about 1 hour.
  • 5. Add the potatoes, carrots, and peas. Continue to cook for another 30-40 minutes, or until the vegetables are tender.
  • 6. Season with salt and pepper to taste. Serve hot.

Notes:

This Cuban Pork Stew is perfect for a cozy dinner. Serve with rice or crusty bread.
