Instructions:
Heat olive oil in a large pot over medium heat.
Add the chopped onion and minced garlic, sauté until softened.
Add the pork cubes and cook until browned on all sides.
Stir in the cumin and paprika, cook for another minute.
Add the black beans and chicken broth. Bring to a boil.
Reduce heat to low, cover, and simmer for about 45 minutes, or until the pork is tender.
Season with salt and pepper to taste. Serve hot.
Notes:
This stew pairs well with rice or crusty bread.
