Ingredients:  

Main Ingredients

  • 1 lb Pork shoulder cut into cubes
  • 1 cup Black beans cooked or canned
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 4 cups Chicken broth
  • 1 tbsp Olive oil
  • Salt and pepper to taste

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic, sauté until softened.
  • Add the pork cubes and cook until browned on all sides.
  • Stir in the cumin and paprika, cook for another minute.
  • Add the black beans and chicken broth. Bring to a boil.
  • Reduce heat to low, cover, and simmer for about 45 minutes, or until the pork is tender.
  • Season with salt and pepper to taste. Serve hot.

Notes:

This stew pairs well with rice or crusty bread.
