Ingredients:  

Main Ingredients

  • 1 kg Pork shoulder cut into chunks
  • 2 tbsp Vegetable oil
  • 1 Onion chopped
  • 3 cloves Garlic minced
  • 2 cups Chicken broth
  • 1 cup Tomato sauce
  • 2 tsp Cumin
  • 1 tsp Paprika
  • 1 tsp Oregano dried
  • 2 Bay leaves
  • 2 Potatoes peeled and diced
  • 1 cup Peas
  • to taste Salt and pepper

Instructions: 

  • 1. Heat the oil in a large pot over medium heat. Add the pork and brown on all sides.
  • 2. Remove the pork and set aside. In the same pot, add the onion and garlic, cooking until softened.
  • 3. Return the pork to the pot. Add the chicken broth, tomato sauce, cumin, paprika, oregano, and bay leaves. Bring to a boil.
  • 4. Reduce heat, cover, and simmer for 1 hour.
  • 5. Add the potatoes and peas. Cook for another 30 minutes, or until the potatoes are tender.
  • 6. Season with salt and pepper to taste. Serve hot.

Notes:

This stew is perfect for a cozy dinner. Serve with rice or crusty bread.
