Instructions:
1. Heat the oil in a large pot over medium heat. Add the pork and brown on all sides.
2. Remove the pork and set aside. In the same pot, add the onion and garlic, cooking until softened.
3. Return the pork to the pot. Add the chicken broth, tomato sauce, cumin, paprika, oregano, and bay leaves. Bring to a boil.
4. Reduce heat, cover, and simmer for 1 hour.
5. Add the potatoes and peas. Cook for another 30 minutes, or until the potatoes are tender.
6. Season with salt and pepper to taste. Serve hot.
Notes:
This stew is perfect for a cozy dinner. Serve with rice or crusty bread.
