shucked oysters with their liquor

whole milk

heavy cream

unsalted butter

small onion, finely chopped
1
celery stalk, finely chopped

tsp
salt
to taste

black pepper
to taste

tbsp
fresh parsley, chopped
for garnish
Instructions:
1. In a large pot, melt the butter over medium heat.
2. Add the chopped onion and celery, and cook until softened, about 5 minutes.
3. Pour in the oyster liquor and bring to a simmer.
4. Add the oysters and cook until their edges begin to curl, about 3 minutes.
5. Stir in the milk and cream, and heat gently until hot but not boiling.
6. Season with salt and pepper to taste.
7. Serve hot, garnished with chopped parsley.
Notes:
For a richer flavor, you can substitute half of the milk with more cream.
