Ingredients:  

Main Ingredients

  • 1 pint shucked oysters with their liquor
  • 2 cups whole milk
  • 1 cup heavy cream
  • 4 tbsp unsalted butter
  • 1 small onion, finely chopped
  • 1 celery stalk, finely chopped
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 1 tbsp fresh parsley, chopped for garnish

Instructions: 

  • 1. In a large pot, melt the butter over medium heat.
  • 2. Add the chopped onion and celery, and cook until softened, about 5 minutes.
  • 3. Pour in the oyster liquor and bring to a simmer.
  • 4. Add the oysters and cook until their edges begin to curl, about 3 minutes.
  • 5. Stir in the milk and cream, and heat gently until hot but not boiling.
  • 6. Season with salt and pepper to taste.
  • 7. Serve hot, garnished with chopped parsley.

Notes:

For a richer flavor, you can substitute half of the milk with more cream.
