New Mexico Green Chile Stew

Ingredients:  

Main Ingredients

  • 2 lbs Pork shoulder, cubed
  • 1 tbsp Vegetable oil
  • 1 Large onion, chopped
  • 3 cloves Garlic, minced
  • 1 lb Roasted green chiles, peeled and chopped
  • 4 cups Chicken broth
  • 4 Russet potatoes, peeled and cubed
  • 1 tsp Salt
  • 1 tsp Ground cumin
  • 1 tsp Dried oregano

Instructions: 

  • Heat the oil in a large pot over medium heat. Add the pork and cook until browned on all sides.
  • Add the onion and garlic to the pot and cook until softened.
  • Stir in the green chiles, chicken broth, potatoes, salt, cumin, and oregano. Bring to a boil.
  • Reduce heat to low and simmer for about 1 hour, or until the pork and potatoes are tender.
  • Serve hot and enjoy!

Notes:

This stew is even better the next day after the flavors have melded together.
