Instructions:
1. In a large pot, bring water to a boil.
2. Add the tripe, onion, and garlic. Simmer for 2 hours.
3. Add hominy, red chili powder, oregano, salt, and pepper. Simmer for another hour.
4. Serve hot with lime wedges and chopped cilantro.
