Ingredients:  

Main Ingredients

  • 2 lbs Beef tripe cleaned and cut into pieces
  • 1 can Hominy drained and rinsed
  • 1 large Onion chopped
  • 4 cloves Garlic minced
  • 2 tbsp Red chili powder
  • 1 tbsp Oregano
  • 1 tsp Salt to taste
  • 1 tsp Pepper to taste
  • 8 cups Water

Instructions: 

  • 1. In a large pot, bring water to a boil.
  • 2. Add the tripe, onion, and garlic. Simmer for 2 hours.
  • 3. Add hominy, red chili powder, oregano, salt, and pepper. Simmer for another hour.
  • 4. Serve hot with lime wedges and chopped cilantro.

Notes:

Menudo is often enjoyed as a hearty meal, especially during celebrations.
