Ingredients:  

Main Ingredients

  • 1 cup black lentils rinsed
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 cups vegetable broth
  • 1 cup diced tomatoes canned
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt to taste
  • 1 tbsp olive oil
  • 1 cup spinach fresh, chopped

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and cook until translucent, about 5 minutes.
  • Add the minced garlic and cook for another minute.
  • Add the rinsed black lentils, vegetable broth, diced tomatoes, cumin, paprika, and salt. Stir to combine.
  • Bring to a boil, then reduce heat to low and simmer for 30-35 minutes, or until the lentils are tender.
  • Stir in the chopped spinach and cook for another 5 minutes.
  • Serve hot and enjoy!

Notes:

This stew is even better the next day, as the flavors have more time to meld together.
