Chilean Beef Stew

Ingredients:  

Main Ingredients

  • 2 lbs Beef chuck, cut into cubes
  • 2 tbsp Olive oil
  • 1 large Onion, chopped
  • 2 cloves Garlic, minced
  • 2 cups Beef broth
  • 1 cup Red wine
  • 2 large Carrots, sliced
  • 2 large Potatoes, diced
  • 1 tsp Paprika
  • 1 tsp Cumin
  • to taste Salt and pepper

Instructions: 

  • Heat the olive oil in a large pot over medium heat. Add the beef and cook until browned on all sides.
  • Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  • Pour in the beef broth and red wine. Bring to a boil, then reduce heat and simmer for 1 hour.
  • Add the carrots, potatoes, paprika, and cumin. Continue to simmer for another hour, or until the vegetables are tender.
  • Season with salt and pepper to taste. Serve hot.

Notes:

This stew is even better the next day after the flavors have melded together.
